Yesterday I volunteered to bake a dessert for a funeral reception this afternoon at church and, so, this morning I got it in my head that I had to make these fabulously delicious oatmeal cookies that I have made in the past from a recipe I copied from Erin's blog. I should have given up the ghost and made something else since I couldn't remember when Erin posted the recipe. I spent the better part of my morning scouring her archives looking for the darn thing and, then, finally there is was: March 18, 2009.
These are delicious enough that I need to have the recipe here, on my blog, so I can find the receipe more quickly and make them more frequently because, really, how can anything with that much butter not be fabulous?
Buttery Brown Sugar and Oatmeal Shortbread
1 c flour
3 T corn starch
1/2 t salt
1 t cinnamon
1 1/2 sticks unsalted butter, softened
1/2 c plus 2 T packed brown sugar
3/4 c oats (not quick oats)
Beat butter and sugar until smooth. Add flour, corn starch, salt and cinnamon, mix until combined. Add oatmeal, mix to distribute evenly. Press into 9 x 9 buttered pan. Bake for 25 minutes in a 350 degree oven, or until the top is browned. Cut into pieces immediately after removing from oven.
My sous chef thinks even the batter is completely delicious (it is).

It's the Little Things
It's amazing to me how happy a simple, seemingly meaningless, change can make me.
Joe and his friends at work finally finished up a bottle of twelve-year-old doublewood Balvenie single malt Scotch Joe had at work. As soon as it was gone, I swiped the bottle and filled it up with with canola oil and threw the ugly, plastic Roundy's bottle away. Since my oft-used olive and canola oils sit out on the counter, this pleases me to no end.
Next up? As soon as Joe works his way through a half empty bottle of twelve-year-old Elijah Craig bourbon my olive oil will find a new, pretty home.

Cooking
I love cooking: the chopping, the dicing, the simmering. It's relaxing and the immediate rewards are obvious. Unless, of course you have kids. Then the rewards become more of a punishment.
"Moooo-OM, I hate chicken chili. Yuck!"
"Moooooo-om, why did you make that?!"
"I want to go to a restaurant; I hate what you made."
If I'm lucky enough to have cooked in relative peace or, as it's known in to me, being interrupted no more than fourteen times to settle disputes, get some toy down or provide a snack that they simply must have this instant because the poor little darling it staaaaarving, then I'm able to handle the complaints with relative cheer. I shrug my shoulders and savor the compilations on my own plate and ignore the theatrics across the table.
But then there's most days. Most days I'm hardly even able to cook with the kids running in and out and needing this and that. Most days my patience supply is dwindling by supper time and the complaints are actually very annoying.
"Moooo-om, this is the worst supper in the entire world."
"Oh really?" I my reply on those nights. "Good. I was trying my best to make something you'd really, really hate. I'm glad I succeeded. Eat it anyway."
This summer I've noticed I've been doing far less cooking than usual. I wonder if this is why.
